Taste of Disney at Home – Carrot Cake Cookie Style

We interrupt your staycation, workcation and daily lives to bring you this delicious piece of Disney nom noms. Like you, we are keeping busy and making sure that Disney is a part of our normal day. Every weekend we have dedicated ourselves to baking (or cooking) something scrumptious from the Disney Parks. It gives us a little piece of Disney at home. Though we are only fifteen minutes from the parks, we are struggling spending time at “our home”, so since calories do not count at Disney then we are good to go!

Cookies Matched in Size

Calling all of you carrot cake fans out there – this one is for you. A few years back, we came across a delicious carrot cookie filled with a sweet cream cheese icing. First, we found it the Writer’s Stop (now Baseline Tap House), then Sweet Spells and now it can be found at Trolley Car Treats (Starbucks). If you have not given this sandwich cookie piece of Heaven a try – next time you visit Hollywood Studios – grab your frappuccino and add the cookie to your order! If you are like us, and simply cannot wait here is how to bring this to your own homes.

Carrot Cake Cookie Batter

Carrot Cake Cookie Ingredients

1 cup – butter

¾ cup – sugar

¾ cup – packed brown sugar

2 – eggs

2 teaspoons – vanilla

2 ½ cups – flour

1 teaspoon – baking soda

2 teaspoons – cinnamon

½ teaspoon – salt

2 cups – carrots

1 cup – chopped pecans (optional)

1 cup – raisins (optional)

Bake 10 – 15 minutes at 350*. Let cool.

Cream Cheese Filling

Cream Cheese Filling

8 oz. – cream cheese

8 tablespoons – butter

1 cup – confectionary sugar

1 teaspoon – vanilla

Blend well!

They Spread-ish
Bake Until Light Brown (for a soft cookie)

Once cookies have fully cooled, match them up according to size. Fill one side of the cookie with the cream cheese filling (make sure to stuff them) and place the other side of the cookie on top. Hint – do not put the cookies together until after they are all filled, that way you can adjust the cream cheese filling as needed.

Stuff ‘Em Good!

After baking the cookies, they tasted truly fabulous and JUST like they do at Trolley Car Treats. They looked lighter in color than one purchased in the park, and well certainly not as pretty, but what they lacked in appearance, they made up for in taste. We personally went lighter on the cinnamon and used light brown sugar, which could have taken away from the color. Either way, this recipe is a MUST DO!
